Lunch Orders

We proudly make all of our lunch items from scratch. Because of this, please allow at least 24 hours for all lunch orders. If lunch orders are not called in by 12 PM the previous day, the chef will select the menu items for you. If we are out of the office when you call please leave the menu on the answering machine. For Monday lunches, all orders need to be placed by 5 PM on the previous Friday.

All catered lunch orders are served Buffet Style. Individual lunches cannot be ordered. Lunch is to be ordered by your group/office as a whole. Each Buffet includes one choice of salad or soup, one main dish, one to two side dishes, one dessert choice, a drink variety of Coke, Diet Coke and sweetened iced tea and paper products.


Salads
Choose one salad as a starter to your meal with an entrée, or enjoy it as a meal with a soup choice, bread and a dessert. Light, simple and delicious!

Layered Salad – Mixed lettuces, bacon, onions, cheese, peas, hard-boiled eggs and a sweet dressing are layered and marinated overnight for a sensational flavor. (Bacon can be omitted)

Ranch House Salad w/ Pecan Vinaigrette – A mixture of salad greens, Monterey cheese, tomatoes, avocadoes, and crispy fried tortilla strips are tossed and served with a creamy pecan dressing on the side.

Orange-Almond Salad – Fresh crisp Romaine is tossed with green onions, mandarin oranges, fresh parsley and caramelized almonds. A sweet and tangy vinaigrette is served alongside.

Tossed Salad w/ Dressing Choice – Romaine lettuce is combined with fresh vegetables of the season and served with Ranch & Italian dressings.

Blue Cheese, Pear & Glazed Nut Salad – Crisp Romaine, salty blue cheese, fresh sliced pears and sweet glazed nuts are tossed and served with a bright Champagne vinaigrette.

Romasian Salad – This delicious salad has a mix of roasted walnuts, crispy noodles, broccoli, green onions and Romaine lettuce. A sweet and sour dressing is served on the side.

Spinach & Strawberries w/ Raspberry Vinaigrette – Fresh baby spinach is tossed with strawberries and pecans and served with a delicious homemade raspberry vinaigrette on the side.

 


Soups
Served as a meal with a salad choice, bread and a dessert or add to an entrée meal for an extra fee.

Baked Potato Soup – Tender cubed potatoes, green onions, bacon, cheddar cheese, and milk are combined and simmered until tender. (Bacon can be omitted)

New Brunswick Stew – Full of tender chicken, bacon, tomatoes, potatoes, onions, garlic, lima beans, corn cooked in a seasoned broth. (Bacon can be omitted)

French Oven Beef Stew – This delicious, slow-baked stew includes stew beef, onions, celery, carrots, potatoes, a tomato broth & spices. It’s slowly simmered in a low oven for hours.

Sante Fe Soup – Ground beef, tomatoes and spices are mixed and simmered. Great with cornbread muffins.

Heidelberg Vegetable Soup – Fresh vegetables like carrots, potatoes, onions, green beans, peas, and corn are mixed with cheese and a little broth.

Chicken Noodle Soup – Fresh chunks of tender chicken are simmered in a seasoned broth with carrots, celery, fresh herbs and egg noodles.

 


Pasta & Rice
These heartwarming dishes are served with your choice of a salad, a bread and a dessert.

Lasagna w/ Garlic Bread – This classic dish has a long-simmered tomato/meat sauce and layers of noodles, Colby-Jack cheese, and spices.

Vegetable Lasagna – A mix of fresh carrots, mushrooms, spinach and tomatoes are layered in between cheese and lasagna and baked until bubbly.

Beef Stroganoff – A delicious combination of tender beef, garlic, onions and mushrooms are mixed with a creamy, rich sauce and served with noodles

Shrimp Tetrazzini – Sautéed shrimp & mushrooms are mixed with a luscious cream sauce and tossed with spaghetti, Parmesan cheese and baked until bubbly.

Chicken Bow Tie Pasta w/ Cream Sauce – Chicken is sautéed until golden and served with vegetables and bow tie pasta tossed in a light cream sauce.

Chicken Stirfry – Crisp vegetables and tender sautéed chicken are seasoned with soy sauce and spices and served over white rice.

Pepper Steak Stirfry – Served over rice, this dish has sliced beef, garlic, onions, peppers, peas, tomatoes and soy sauce.

 


Beef
Served with your choice of a salad, one side dish, bread and a dessert.

Lunchtime Meatloaf – A mixture of ground beef, celery, peppers, onions, and special seasonings are baked and topped with a sweet and sour tomato sauce.

Beef Pot Roast – Cooked slowly for hours, this cut of beef is simmered with potatoes and carrots until very tender.

Swiss Round Steak Packets – Tenderized round steak is combined in a aluminum foil packet with mushrooms, green peppers, tomatoes and spices and baked.

Burgundy Beef – Tender cubed beef is baked slowly with mushrooms, onions, Burgundy red wine, and spices and served over egg noodles.

 


Vegetarian
Served with your choice of a salad, one side dish, one bread and a dessert.

Pecan Stuffed Portobellos – Portobellos are brushed lightly with butter and grilled slightly. A stuffing of green onions, pecans, seasoned bread crumbs and apple juice is spooned into them and cooked until tender.

Grilled Vegetable Sandwiches – Fresh vegetables included zucchini, squash, red onions, eggplant & mushrooms are served with small baguettes and a spicy sauce on the side.

Vegetable Pizza – Fresh from the garden vegetables like broccoli, carrots, cauliflower, cucumber and tomatoes top a herbed cream cheese golden brown crust.

Eggplant Parmigiana – Lightly sautéed eggplant slices are layered with tomato sauce, mozzarella cheese, and basil.

 


Seafood
Served with your choice of a salad, one side dish, one bread and a dessert.

Crab Cakes – Lump crabmeat is mixed with red peppers, spices and a little binder and sautéed until golden. These can be served with either homemade honey-jalapeno dressing or tartar sauce.

Shrimp Pie – A filling of chopped shrimp, mushrooms, onions, Parmesan cheese and a white sauce is layered into a flaky crust, topped with buttered bread crumbs, and baked until gold & bubbly.

Baked Tilapia in a Bag – Individual tilapia white fish fillets are layered with fresh vegetables, pats of butter, and a splash of lemon juice in a parchment paper packet and baked until flaky.

Roasted Dijon Salmon – Fresh salmon fillets are brushed with a mixture of butter, honey and Dijon mustard and topped with a mix of bread crumbs, pecans and parsley. They are then baked until tender.

Chicken a la King – Cubed chicken breasts are sautéed slowly with mushrooms, bell peppers & pimientos. A sauce of chicken broth, sherry and sour cream tops the dish.

Italian Chicken Delight – Lightly breaded and sautéed chicken breasts are accented with a sauce made of fresh tomatoes, butter, garlic, Parmesan and mozzarella cheese.

Grilled Lemon Pepper Chicken – Tender chicken breasts are grilled with a lemon pepper seasoning and lemon juice added for extra zing.

Orange-Pecan Glazed Chicken & Wild Rice – Baked chicken breasts are topped with a orange marmalade-pecan sauce and served with seasoned wild rice.

Chicken Key West – These tangy and terrific chicken breasts are sautéed with onions and garlic and served with a deglazed pan sauce of real key lime juice and paprika. It’s served on a bed of perfumed Jasmine rice.

Parmesan Chicken – Chicken breasts are dipped in butter and then in a mixture of bread crumbs, Parmesan cheese, and herbs and baked until tender.

Chicken Puffs – A creamy chicken filling is encased in a puff pastry dough and baked. A cream sauce is spooned over top for added deliciousness.

Baked Chicken Breasts w/ Cumberland Sauce – Chicken breasts are baked with a seasoned crust of sesame seeds, bread crumbs and Parmesan cheese and served with a sweet sauce of currant jelly, orange juice, sherry, mustard and ginger.

Almond Chicken Casserole – Crunchy vegetables like onions, celery and water chestnuts and mixed with a cream sauce and cooked cubed chicken and topped Swiss cheese and almond bread crust.

Chicken Divine – A creamy mix of chicken, milk, mushrooms, cheddar cheese, curry, broccoli and a dab of mayo is combined, topped with Ritz crackers and baked until bubbly.

Garden Chicken Pie – An updated and lighter-lunch version of chicken pot pie, this one is full of chunky chicken, green peas, carrots and topped with a crispy phyllo-dough crust.
 

Chicken in a Packet – BBQ’ed chicken, red and green peppers, potatoes, sweet onions and spices are baked in aluminum foil until tender and served piping hot.

 


Side Dishes
Choose one side dish when ordering a beef, seafood, vegetarian or chicken entrée. Additional side dishes may be ordered for an extra fee.

Hashbrown Casserole – Full of cheese and special seasonings, these potatoes are a winner everybody will love. Perfect for those that want an alternative to a regular baked potato.

Roasted Red Potatoes – Quartered red potatoes are mixed with butter and seasonings and baked until crispy on the outside and soft on the inside.

Mashed Potatoes – Around here boxed, dried potates never do. Real potatoes are mixed with cream, seasonings and real butter and whipped by hand for a great homemade taste.

Potato Cakes – Mashed potatoes are mixed with bacon, green onions, seasonings and a little binder, shaped into round discs and sautéed until golden. (Bacon can be omitted)

Fried Green Tomatoes – These southern delicacies are served golden brown and crunchy with a deliciously sweet tomato chutney to compliment their tanginess.

Broccoli Casserole – Broccoli, cheese, and a cream sauce are mixed, topped with crunchy Ritz crackers and baked until golden and bubbly.

Vegetable Casserole- Yellow squash, onions, carrots, spices and cheese are mixed together, topped with crunchy Ritz crackers and baked.

 Southern Tomato Pie – Ripe tomatoes are layered into a pie shell and topped with Italian spices and a cheese sauce and baked. Delicious and different!

Marinated Carrots – Sliced carrot round are cooked with peppers and onions and mixed with a seasoned tomato sauce and marinated overnight.

Old-Fashioned Macaroni & Cheese – With a made from scratch cheese sauce, this favorite dish is baked until gooey and golden brown.

Vegetable Pilaf – Colorful chopped fresh broccoli, carrots, onions, mushrooms, garlic, herbs and pecans are sautéed and mixed with cooked brown rice.

Country Green Beans – Made with a ham hock and cooked until very tender. (Ham can be omitted)

Steamed Vegetables - Broccoli, cauliflower, carrots, squash and zucchini are all steamed under tender and topped with a little Parmesan and a special seasoning for added zestiness.

 


Artisan Breads
Our breads are baked fresh daily and served warm with butter.

Yeast Rolls – Fresh and warm from the oven, these soft rolls are served brushed with butter.

Sweet Potato Biscuits – Don’t be afraid to try these delicious morsels. They’re slightly sweet, yet savory. Add some butter and you’re good!

Spoon Bread – A southern tradition, this flat savory bread is soft, cutable, and is served with a spoon.

Cornbread Muffins – Golden brown and delicious corn muffins are a great accompaniment to any soup or spicy dish.

Herb Rolls – Parsley, thyme, dill and basil are kneaded into the roll dough, which is baked until golden and soft.

Cheddar Garlic Biscuits – Rich shredded cheddar cheese, parsley, and a touch of garlic are mixed into a biscuit dough, baked, and served piping hot.


Desserts
Any of these desserts are a great way to end a meal.

Cookie Sampler – Choose two of the three: Our soft, luscious, homemade chocolate chip cookies, the light and lovely lemon drop cookies, or the addictive rich ‘Can’t Stop’ cornflake butter cookies.

Chocolate Chip Pizza – A made-from-scratch cookie dough is baked, topped with mini marshmallows, more chocolate chips and pecans and baked again until melted and brown. Yum.

Butter Crème Brownies – A fudgy chocolate brownie is topped with a rich, buttery sweet frosting and glaze with swirls of melted chocolate.

Blueberry Pie – A graham cracker crust is the base for this light fruit pie. A delicately sweet cream cheese/whipped cream layer is topped with a sugared blueberry sauce and chilled.

Strawberry Trifle – Cubed pound cake, plump & juicy strawberries, vanilla pudding and whipped cream are layered and chilled.

Fruit Pizza – A sugar cookie crust is baked until golden, spread with a sweet cream ‘sauce’ and artfully topped with seasonal fruits.

Apple Dumplings w/ Ice Cream – Flaky pastry is wrapped around Granny Smith apples, topped with a butter cinnamon mixture and baked until golden. Served with vanilla ice cream.

Lemon Lush – A nutty crust is topped with a mixture of cream cheese, powdered sugar, whipped cream. Topping that off is a lemony layer and additional whipped cream and a garnish of pecans and lemon zest.

Pecan Tassies – These miniature, bite-sized versions of a whole pecan pie are packed full of pecans and flavor. Great to nibble on after a satisfying meal when you want a little something sweet.
